A rare opportunity to learn how one of the best teams in the world prepare and cook their competition chicken, ribs, pork and brisket
Ed and Emma from Bunch of Swines BBQ Team have been competing and winning KCBS (Kansas City Barbecue Society) barbecue competitions in the UK, all over Europe and in The States for many years. Their accolades include over 60 Grand Champion & Reserve Grand Champion trophies.
Ed and Emma from Bunch of Swines have been competing since the early days of competition barbecue in the UK. Over that time they have perfected their process and technique to become one of the best KCBS teams in the world. That's no mean feat with hundreds of competitions and thousands of teams across The States and Europe each year. They have won competitions all over the world including the biggest of them all, The Royal Invitational in Kanas City in 2018, winning against over 150 teams. Before that in 2015, Emma was the runner-up on the ITV show BBQ Champ displaying her barbecue skills to the nation.
KCBS or Kanas City Barbecue Society is the biggest barbecue competition sanctioning body in the world and sanction hundreds of contests across The USA, Europe, South America and Australasia. KCBS competitions are one of the most traditional form of competition based around American low and slow barbecue. The format of a KCBS competition is always the same, Chicken, Pork Ribs, Pork Shoulder and Brisket, with the aim of teams and cooks being to produce their entries as close as possible to the "KCBS Standard". A theoretical perfect entry in appearance, teste and tenderness.
The course will be a totally immersive approach to understanding what the "KCBS Standard" is, how to prepare your meats, how to cook your meats and how to present your entries for competitions. There may even be a few tricks and secrets from Ed and Emma along the way from their many years experience winning competitions across the world. There will be an experienced KCBS judge on hand also, to give an insight in to how the entries are judged, what they look for and some do's and don'ts.
